Carbs & Soup Are Totally My Thing.

Hey Hey Hey!

Long time no talk, for reals.

Started a new job this week so forgive me for being MIA. If you did miss me, please know that I missed you too. And please know that I may be posting a little less now that I am working two jobs, plus taking my nutritionist course, plus it’s almost summer, plus preparing for Nursing in September. Busy busy.

So that pretty much catches you up on what’s new with me but I’m still running outside lots, still eating lots of good food and still drinking lots of wine. That hasn’t changed.

It was only fitting that my first post of the week be written for one of my favourite link-ups, Five Things Friday.

FIVE THINGS I ATE..

1. Cacao Porridge w| Tahini and Toasted Pumpkin Seeds VIA applesundermybed. If you are any kind of oatmeal connoisseur or belong to oatmeal addicts anonymous then you must try this. I like it because it has more of a savoury flavour versus sweet, a nice change up from my usual breaky.

2. Avocado Smoothies. I don’t think I’ve made a smoothie without avo in the past two weeks. It is so-stinking-good. Thick, creamy, delicious and it keeps me full for hours. My favourite breakfast shake is avocado + banana + ice + almond milk + vanilla protein + cinnamon + spinach.

3. Lasagne soup + toast with coconut oil + mason jar drinks.  I wish I could eat this every day but I have a feeling my soup days are numbered with summer just around the corner. It was like, amaze balls the first night – orgasmic the next day for lunch.

4. Salad-ing pretty much on a daily basis. I don’t usually have animal protein with it but I always have a side of carbs. Check out this post for some great salad recipes.

5. Annnnd more soup. And Carbs. Carby Carb Carbs. For the soup I used corn, mushrooms, zucchini and red bell pepper simmered in vegetable broth with tomato paste, fresh basil, cumin, chill powder and fresh garlic. So simple, quick and delicious.

Spelt Baking Powder Biscuits
Serves 6
1 cup spelt flour
1 1/2 tsp baking powder
1/4 tsp sea salt
1/8 cup coconut oil {or butter}
1/4 cup + 2 tbsp almond milk {sub choice of milk}

Preheat oven to 425. Combine flour, baking powder and salt together. With a knife cut the coconut oil into the flour until you are left with small crumbles. Slowly pour in milk and mix until just combined kneading only a few times. Roll out onto lightly floured surface. Divide into 6 and place on baking sheet. Bake for 10 minutes.

1. Warm weather and “adult” sippy cups. Plus good friends, good times, good laughs and enjoying the little things in life.

2. A lil retail therapy. I have always wanted a jeep. Work hard, set goals, smash those goals reap the benefits of working your ass off.

3. Fresh hair for summer! Self explanatory.

4. T-MINUS one day. Although, it doesn’t feel real yet.. never does until you board the plane in my opinion. {Still taking suggestions on places to eat things to do in Venice/Santa Monica area!!}

5. My poor girl was not feeling good for a few days before we decided to take her into the vet. She ended up being fine but it was really scary seeing her turn into a totally different dog when she wasn’t feeling well. Cheezy, I know but it was just another reminder to really cherish every moment that you spend with your loved ones. She is back to normal, this totally melts my heart and puts a huge smile on my face.
